Ann and I were treated this week to an authentic South Louisiana crab boil. The only missing ingredients were the cajun music and liquid refreshments they might bring to such a festival in Louisiana. The Box family, Bob and Jimmie , introduced us to this delicious fare. A large pot already had cooked shrimp, potatos, garlic, onions, and other unnamed veggies. A boiling pot of water awaited the live but dormant crabs sleeping in crushed ice. They went from icy cold to boiling hot for twelve minutes and came out looking like pink newborns! Then the fun began! The delicious crab meat is hidden in compartments throughout this shelled critter. It is like a treasure hunt to search among the lungs, roe, and unnamed body parts, to find that rich white crab meat. The next time you eat a crab cake give a salute to the skilled artisan who removed those little bits of crab for your pleasure. Don't forget the legs. It's like cracking a pecan but there is good eating in that location as well. I managed to break into four of these pink beauties and taste some of their sweetness. We be havin' som fun mon!
